Everybody loves a good dessert; however, unique Kulfi are hard to come by. People are tired of eating the same old cookies with a twist, or cake with fancy frosting. Surprise your next party or gathering with the delicious, Deluxe Cheesecake.
There are two mixtures to be prepared when making the Deluxe Cheesecake: the cookie mixture and the cheese filling. The cookie mixture ingredients are one cup of sifted all purpose flour, one-fourth cup of sugar, one teaspoon of grated lemon rind, one-fourth teaspoon of vanilla, half a cup of soft butter, and one egg yolk.
The ingredients for the cheese filling are five eight-ounce packages of soft cream cheese, one and three-fourth cups of granulated sugar, one-fourth teaspoon of vanilla, half a teaspoon of grated orange rind, three tablespoons of flour, one-fourth teaspoon of salt, half a teaspoon of grated lemon rind, five medium eggs and two yolks, one-fourth cup of heavy cream, and one cup of sour cream.
First, mix the flour, sugar, and lemon rind. With a pastry blender or two knives, cut in the butter, vanilla, and one egg yolk. Shape this into a ball and wrap it in waxed paper. Refrigerate this for one hour. Heat the oven to 400 degrees. Roll out one-third of the dough between floured pieces of waxed paper or a pastry cloth into a nine and a half inch circle. Place on the bottom of a nine inch by three inch spring form pan. Trim the dough to fit perfectly. Bake at 400 degrees or until the dessert is a golden brown. Grease the side of the pan; fit over the base and roll the rest of the dough into a fifteen inch by four inch rectangle. Cut it in half and line the side of the pan, patching if it is necessary.
Next, increase the oven to 500 degrees. Mix the cheese in a mixer until fluffy. Combine the sugar with vanilla, orange rind, flour, salt, and lemon rind. Slowly add to the cheese, beating until the mixture is smooth. Add eggs and two yolks, one at a time, beating after each addition. Next, stir in the heavy cream. Turn into a lined pan and bake at 500 degrees for twelve minutes or until dough is golden brown. Reduce the oven to 200 degrees after the twelve minutes are up. Bake this dessert again for one hour. Once the hour has gone, remove from the oven and let the dessert cool on a rack. Remove the side of the pan and refrigerate until cool completely. Cover this with one-fourth inch layer of sour cream to serve.
This recipe will yield twelve to fourteen servings. This decadent cheesecake will continuously shock and excite party guests.
